
White Chicken Chili
Shredded chicken, white beans, corn and mild green chiles simmer into a cozy dairy-free weeknight pot.

- Boneless chicken breasts1 1/4 lb
- Great Northern beans2 15-oz cans
- Corn1 cup
- Mild diced green chiles4 oz
- Low-sodium chicken broth4 cups
- Yellow onion1
- Garlic3 cloves
- Ground cumin2 tsp
- Lime1
- Fresh cilantro1 bunch
- Olive oil1 tbsp
How dinner comes together
Dice the onion and mince the garlic. Drain and rinse the beans.
Heat the oil in a Dutch oven. Cook the onion until soft, 5–6 minutes, then stir in the garlic and cumin for 30 seconds.
Add the chicken, broth and green chiles. Bring to a gentle simmer, cover and cook until the chicken reaches 165°F, 12–15 minutes.
Transfer the chicken to a plate and shred it into uneven pieces with two forks.
Return the chicken to the pot with the beans and corn. Simmer for 5 minutes, then finish with lime juice and cilantro.
