
Turkey meatloaf, mash & carrots
Tender individual turkey meatloaves with creamy mashed potatoes and sweet roasted carrots on the side.
Ingredients

- Certified gluten-free quick oats3/4 cup
- Large egg1
- Ketchup1/2 cup
- Yellow onion1
- Russet potatoes2 lb
- Whole milk3/4 cup
- Unsalted butter2 tbsp
- Carrots1 lb
- Olive oil1 tbsp
How dinner comes together
Heat the oven to 425°F. Peel and cube the potatoes, cut the carrots into sticks and finely grate the onion.
Toss the carrots with olive oil, 1/4 teaspoon kosher salt and black pepper on one side of the sheet pan. Mix the turkey, oats, egg, grated onion, 1 teaspoon kosher salt, black pepper and half the ketchup in the bowl.
Shape the turkey mixture into one small loaf per person on the empty side of the pan and spread the remaining ketchup over their tops.
Roast until the carrots are tender and the center of each meatloaf reaches 165°F, 28–32 minutes.
While the meatloaves roast, cover the potatoes with cold water, bring to a boil and cook until completely tender, 15–18 minutes.
Drain the potatoes well, then mash them with the milk and butter; taste for salt. Serve with the turkey meatloaves and roasted carrots.
