How dinner comes together
Heat the oven to 450°F. Cut the sweet potatoes into 1/2-inch wedges, toss with 1 1/2 tablespoons olive oil, paprika and salt and spread cut-side down on the sheet pan.
Roast the wedges until browned underneath, then turn and roast until tender and crisp at the edges, 18–22 minutes total.
Meanwhile, grate half the onion and the garlic into a bowl. Add the turkey, mustard, 3/4 teaspoon salt and pepper; mix gently and form one patty per bun, each slightly wider than its bun.
Heat the remaining oil in the skillet over medium-high. Cook the patties until browned on both sides and the center reaches 165°F, 5–6 minutes per side.
Thinly slice the remaining onion and tomato. Toast the cut sides of the buns in the skillet for about 1 minute.
Build each burger with romaine, tomato and onion and serve with the hot sweet-potato wedges.
