
Turkey & bean chili
A mild, hearty turkey chili with two kinds of beans, sweet corn and a tomato-rich broth.
Ingredients

- Kidney beans1 15-oz can
- Black beans1 15-oz can
- Crushed tomatoes28 oz
- Yellow onion1
- Bell pepper1
- Frozen corn1 1/2 cups
- Mild chili powder1 tbsp
- Ground cumin2 tsp
- Olive oil1 tbsp
How dinner comes together
Dice the onion and bell pepper. Drain and rinse both cans of beans.
Heat the olive oil in the Dutch oven and cook the onion and pepper with a pinch of kosher salt until softened, 4–5 minutes.
Add the ground turkey, chili powder and cumin. Break the turkey into small crumbles and cook until it reaches 165°F.
Stir in the crushed tomatoes, both beans, corn and 1 cup water, scraping up any browned bits from the pot.
Bring to a lively simmer and cook uncovered until the chili is thick enough to hold on a spoon, 10–12 minutes.
Taste and adjust the salt, pepper and mild seasoning before ladling the chili into bowls.
