How dinner comes together
Heat the oven to 450°F. Slice the chicken, bell peppers and red onion into strips of similar thickness.
Toss the chicken and vegetables on the sheet pan with the olive oil, chili powder, cumin, 1 teaspoon kosher salt, black pepper and the juice of one lime.
Spread everything into a single layer, keeping the chicken pieces from overlapping.
Roast until the vegetables are browned at the edges and the chicken reaches 165°F, 16–20 minutes.
Warm the tortillas and slice the avocados while the fajita filling roasts.
Finish the pan with the remaining lime, then serve with the warm tortillas, avocado and cilantro for everyone to build their own.
