  • Crushed tomatoes28 oz
  • Garlic3 cloves
  • Baby spinach5 oz

  • Olive oil1 tbsp
  • Fresh basil1 bunch

How dinner comes together

  1. Bring a large saucepan of salted water to a boil. Slice the peppers and onion, mince the garlic and remove the sausage from its casing if needed.

  2. Cook the penne until just al dente according to the package directions; reserve 1 cup pasta water before draining.

  3. Meanwhile, brown the sausage in the skillet, breaking it into bite-size pieces, until the ground pork reaches 160°F.

  4. Add the peppers and onion with a pinch of kosher salt and cook until softened and lightly browned, 5–6 minutes; stir in the garlic and Italian seasoning.

  5. Pour in the crushed tomatoes and simmer until slightly thickened, then fold in the spinach until it wilts.

  6. Add the drained penne and enough reserved pasta water to coat every piece. Finish with torn basil and serve.
