Salmon, baby potatoes and green beans share one pan with lemon, garlic and dill for a low-cleanup dinner.

Ingredients

Base quantities for 4 people. DinnerRoster resizes them to your household when you build a roster.

  • Salmon fillets4
  • Baby potatoes1 1/4 lb
  • Green beans12 oz
  • Lemons2
  • Garlic3 cloves
  • Fresh dill1 bunch
  • Olive oil2 tbsp

How dinner comes together

  1. Heat the oven to 425°F. Halve the potatoes, toss them with 1 tablespoon oil, salt and pepper, and roast cut-side down for 10 minutes.

  2. Trim the green beans. Mix the remaining oil with minced garlic, chopped dill and the juice of one lemon.

  3. Add the green beans and salmon to the pan. Brush the salmon with the lemon-dill mixture and cut the second lemon into wedges.

  4. Roast until the salmon flakes easily and reaches 145°F and the vegetables are tender, 10–12 minutes.

  5. Rest the salmon briefly and serve with the roasted vegetables and lemon wedges.
