  • Brown lentils, drained and rinsed2 15-oz cans
  • Plain hamburger buns made without milk, egg, soy or sesame4
  • Small yellow onion1
  • Green bell pepper1
  • Ketchup3/4 cup
  • Tomato paste2 tbsp
  • Yellow mustard1 tbsp
  • Apple cider vinegar3 tbsp
  • Light brown sugar1 tbsp
  • Shredded coleslaw mix12 oz
  • Olive oil2 tbsp
  • Smoked paprika1 tsp

How dinner comes together

  1. Finely dice the onion and bell pepper. Toss the slaw mix with 2 tablespoons vinegar, 1 tablespoon olive oil and a pinch of salt.

  2. Heat the remaining oil in the skillet over medium-high. Cook the onion and bell pepper until softened and lightly browned, 5–6 minutes.

  3. Stir in the tomato paste and paprika for 30 seconds. Add the lentils, ketchup, mustard, brown sugar, remaining vinegar and 1/2 cup water.

  4. Simmer uncovered, stirring and lightly crushing some lentils, until the mixture is thick enough to mound on a spoon, 8–10 minutes.

  5. Split and toast the buns until their cut sides are golden; this keeps the sauce from soaking in too quickly.

  6. Taste the lentils for sweet-tangy balance. Spoon onto the bottom buns, top with slaw and close the sandwiches; keep extra slaw alongside.
