
Honey-Soy Chicken & Broccoli Rice Bowls

- Boneless chicken thighs1 1/4 lb
- Broccoli1 lb
- Jasmine rice1 1/2 cups
- Gluten-free tamari1/4 cup
- Honey3 tbsp
- Garlic3 cloves
- Scallions4
- Cornstarch1 tbsp
How dinner comes together
Cook the rice according to the package directions. Cut the chicken into uneven bite-size pieces and the broccoli into small florets.
Whisk the tamari, honey, minced garlic, cornstarch and 1/2 cup water until smooth.
Sear the chicken in a large skillet until browned and it reaches 165°F, 7–9 minutes.
Add the broccoli and 1/4 cup water. Cover for 3 minutes, then uncover and cook until crisp-tender.
Pour in the sauce and toss until glossy and thickened, 1–2 minutes. Serve over rice with sliced scallions.
