Garlic shrimp spaghetti & peas

Juicy lemon-garlic shrimp, sweet peas and silky olive-oil sauce cling to spaghetti for a fast dinner that still feels special.

  • Large peeled and deveined shrimp, tails removed1 1/4 lb
  • Frozen green peas1 1/2 cups
  • Garlic cloves5
  • Large lemon1
  • Flat-leaf parsley1/2 cup
  • Large shallot1
  • Extra-virgin olive oil1/4 cup

How dinner comes together

  1. Bring a large pot of well-salted water to a boil. Mince the garlic and shallot, chop the parsley, zest the lemon and pat the shrimp very dry.

  2. Cook the spaghetti until 1 minute shy of al dente, adding the peas for the final 2 minutes. Reserve 1 cup pasta water, then drain.

  3. Meanwhile, heat 1 tablespoon olive oil in the skillet over medium-high. Arrange the shrimp in one layer and cook 2 minutes; flip and cook until opaque and 145°F, about 1 minute more. Transfer immediately to a plate.

  4. Lower the heat to medium. Add the remaining oil and shallot; cook 2 minutes. Add the garlic and lemon zest and stir just until fragrant, 30 seconds, without browning the garlic.

  5. Add the drained pasta, peas and 1/2 cup reserved water. Toss vigorously until the liquid turns glossy and coats the spaghetti, adding more water a splash at a time, 1–2 minutes.

  6. Take off the heat. Fold in the shrimp, parsley and lemon juice, then season with salt and black pepper; serve immediately.
