
Crispy chickpea-corn tostadas & avocado slaw

- 6-inch corn tortillas8
- Chickpeas, drained, rinsed and dried2 15-oz cans
- Frozen corn, thawed1 1/2 cups
- Shredded cabbage and carrot mix10 oz
- Large avocados2
- Limes2
- Fresh cilantro1/2 cup
- Tomato paste2 tbsp
- Ground cumin1 1/2 tsp
- Smoked paprika1 tsp
- Olive oil3 tbsp
How dinner comes together
Heat the oven to 425°F. Brush both sides of the tortillas with 1 tablespoon olive oil and arrange them without overlap on a sheet pan.
Bake the tortillas until rigid, dry and golden at the edges, 8–10 minutes, turning once. They will crisp a little more as they cool.
On the second pan, toss the chickpeas and corn with the remaining oil, cumin, paprika and 1/2 teaspoon kosher salt. Roast until the corn spots brown, 10–12 minutes.
Mash half an avocado with the tomato paste, juice of one lime and 2 tablespoons water. Fold the warm chickpea mixture into this quick sauce so it holds on the tostadas.
Toss the slaw mix and half the cilantro with the juice of the remaining lime and a pinch of salt. Slice the remaining avocado.
Top each crisp tortilla only when ready to eat with chickpeas, slaw, avocado and remaining cilantro. Store the shells and toppings separately.
