
Creamy Tomato White Beans & Spinach
Cannellini beans and spinach simmer in a creamy tomato skillet that is inexpensive, filling and ready fast.

- Cannellini beans2 15-oz cans
- Diced tomatoes14 1/2 oz
- Baby spinach5 oz
- Heavy cream1/2 cup
- Parmesan1/2 cup
- Yellow onion1
- Garlic3 cloves
- Italian seasoning1 tsp
- Olive oil1 tbsp
How dinner comes together
Drain and rinse the beans. Dice the onion and mince the garlic.
Heat the oil in a deep skillet. Cook the onion with a pinch of salt until soft, 5–6 minutes.
Add the garlic and Italian seasoning for 30 seconds, then stir in the tomatoes and beans. Simmer for 8 minutes.
Lower the heat and stir in the cream and half the parmesan until the sauce is cohesive.
Fold in the spinach until just wilted. Season to taste and finish with the remaining parmesan.
