
Chicken-broccoli rice casserole

- Microwave brown rice2 8.8-oz pouches
- Frozen broccoli florets12 oz
- Shredded cheddar cheese1 1/2 cups
- Whole milk1 1/2 cups
- Cream cheese4 oz
- Garlic powder1 tsp
- Onion powder1 tsp
- Olive oil1 tbsp

How dinner comes together
Heat the oven to 425°F and lightly oil the baking dish. Microwave the rice according to its package directions.
Warm the milk and cream cheese in the saucepan, whisking until smooth, then season with the garlic powder, onion powder, 1/2 teaspoon kosher salt and black pepper.
Combine the chicken, hot rice, frozen broccoli, half the cheddar and the cream-cheese sauce in the baking dish.
Spread the mixture evenly and scatter the remaining cheddar over the top.
Bake until the center reaches 165°F, the broccoli is tender and the cheese is bubbling, 18–20 minutes.
Thinly slice the scallions, scatter them over the casserole and let it stand for 5 minutes before serving.
