
Cheeseburger bowls & oven wedges

Ingredients

- Russet potatoes2 lb
- Romaine hearts2
- Cherry tomatoes1 pint
- Dill pickle chips1 cup
- Dairy-free cheddar-style shreds1 cup

- Ketchup1/4 cup
- Yellow mustard2 tbsp
- Olive oil2 tbsp
- Smoked paprika1 tsp
How dinner comes together
Heat the oven to 450°F. Cut the potatoes into slim wedges, toss them with the olive oil, smoked paprika, 1/2 teaspoon kosher salt and black pepper and spread them cut-side down on the sheet pan.
Roast the wedges until browned underneath, flip and continue until crisp outside and tender inside, 22–25 minutes total.
Meanwhile, chop the romaine, halve the tomatoes and thinly slice the red onion.
Brown the beef in the skillet with 3/4 teaspoon kosher salt and black pepper, breaking it into chunky crumbles, until it reaches 160°F. Stir in half the ketchup and half the mustard, scatter over the dairy-free cheddar and cover until it melts.
Stir the remaining ketchup and mustard together with 1 tablespoon pickle brine to make a quick burger dressing.
Let everyone build a bowl with romaine, seasoned beef, tomatoes, onion and pickles; drizzle with dressing and serve the wedges alongside.
