
Black-bean burger patties & oven fries
Savory black bean patties with crisp oven sweet-potato fries and a lime-dressed crunchy slaw—no bun required.

- Black beans, drained, rinsed and patted dry2 15-oz cans
- Sweet potatoes2 lb
- Certified gluten-free quick oats3/4 cup
- Ground flaxseed2 tbsp
- Small red onion1
- Garlic cloves2
- Shredded coleslaw mix10 oz
- Limes2
- Olive oil3 tbsp
- Ground cumin2 tsp
- Smoked paprika1 tsp
How dinner comes together
Heat the oven to 425°F. Cut the sweet potatoes into 1/2-inch fries. Stir the flaxseed with 5 tablespoons water and let it thicken.
Toss the fries with 1 1/2 tablespoons olive oil, spread them on two-thirds of the sheet pan and season. Spread the dry beans on the remaining third.
Roast for 8 minutes. Remove the beans to the mixing bowl, turn the fries and return the pan to the oven.
Mash the beans until about three-quarters are broken down. Mix in the flax mixture, oats, half the finely chopped onion, grated garlic, cumin, paprika and 1/2 teaspoon salt; form one 3/4-inch-thick patty per planned serving.
Brush the open section of the pan with 1/2 tablespoon oil, add the patties and bake everything until the fries are browned and the patties feel firm at the edges, 14–16 minutes, flipping the patties once.
Toss the slaw and remaining onion with the lime juice and remaining olive oil. Serve one patty per person with the fries and slaw.
