
Beef burrito rice bowls
Cumin-spiced beef, black beans, corn and cilantro-lime rice with crisp lettuce, salsa and avocado for easy custom bowls.

- Lean ground beef1 1/4 lb
- Cooked white rice4 cups
- Black beans, drained and rinsed1 15-oz can
- Frozen corn1 cup
- Prepared tomato salsa1 1/2 cups
- Romaine hearts2
- Large avocado1
- Limes2
- Fresh cilantro1/2 cup
- Ground cumin2 tsp
- Mild chili powder2 tsp
How dinner comes together
Chop the romaine and cilantro, dice the avocado and cut the limes into wedges. Warm the rice according to its package.
Heat the skillet over medium-high. Add the beef, cumin, chili powder and 1/2 teaspoon salt; cook, crumbling it into small pieces, until browned throughout and it reaches 160°F, 6–8 minutes.
Move the beef to one side of the skillet. Add the beans and corn to the other side with 1/4 cup water, cover and heat until steaming, 3–4 minutes.
Toss the warm rice with the juice of one lime and half the cilantro. Taste and add a pinch of salt if needed.
Divide the rice among serving bowls. Arrange the beef, beans, corn and romaine in separate sections over the top.
Finish with salsa, avocado, remaining cilantro and lime wedges so everyone can adjust their own bowl.
