
Beef & Black Bean Taco Night
Seasoned beef and black beans meet crunchy cabbage, pico and avocado so everyone can build a taco they want.

- Shredded red cabbage3 cups
- Pico de gallo1 1/2 cups
- Avocados2
- Limes2

- Ground cumin1 tsp
How dinner comes together
Drain and rinse the black beans. Slice the avocados, cut the limes and place the cabbage, pico and cilantro in separate bowls.
Brown the beef in a large skillet over medium-high heat, breaking it into irregular crumbles, until it reaches 160°F, 6–7 minutes.
Stir in the black beans, chili powder, cumin, 1/2 cup water and a pinch of salt. Simmer until the mixture is juicy but not wet, 4–5 minutes.
Warm the tortillas in a dry skillet or wrapped in a damp towel in the microwave until soft.
Set the warm filling and toppings on the table so everyone can build their own tacos and finish with lime.
