
BBQ pulled chicken sandwiches & slaw
Saucy pulled chicken, crisp tangy slaw and pickles piled into soft buns for a fast family sandwich night.
Ingredients

- Boneless skinless chicken breasts1 1/2 lb
- Dairy-free barbecue sauce3/4 cup
- Hamburger buns4
- Shredded coleslaw mix12 oz
- Apple cider vinegar1 1/2 tbsp
- Honey2 tsp
- Olive oil1 tbsp
- Dill pickle chips1/2 cup
How dinner comes together
Slice each chicken breast horizontally into two thin cutlets so they cook quickly and evenly; season lightly with black pepper.
Place the chicken, barbecue sauce and 1/2 cup water in the skillet. Cover and simmer over medium heat until the chicken reaches 165°F, 10–12 minutes.
Meanwhile, toss the coleslaw mix with the vinegar, honey, olive oil and a pinch of kosher salt until lightly coated.
Transfer the cooked chicken to a plate and shred it with two forks. Boil the sauce uncovered for 2 minutes, then return the chicken and toss until glossy.
Toast the cut sides of the buns if desired, then fill each bun with pulled chicken, tangy slaw and pickle chips.
