Creamy cheddar macaroni bakes with peas and broccoli under a lightly crisp breadcrumb topping.

Ingredients

  • Elbow macaroni12 oz
  • Broccoli florets12 oz
  • Frozen peas1 cup
  • Sharp cheddar2 1/2 cups
  • Whole milk2 cups
  • Plain breadcrumbs1/2 cup
  • Unsalted butter3 tbsp
  • All-purpose flour2 tbsp

How dinner comes together

  1. Heat the oven to 425°F and lightly grease a 9 × 13-inch baking dish.

  2. Boil the macaroni 2 minutes less than the package directions. Add the broccoli for the final 2 minutes, then drain.

  3. Melt 2 tablespoons butter in a saucepan. Whisk in the flour for 1 minute, then gradually whisk in the milk until thickened.

  4. Remove from the heat and stir in 2 cups cheddar until smooth. Fold in the macaroni, broccoli and peas.

  5. Transfer to the dish. Mix the breadcrumbs with the remaining melted butter and scatter with the remaining cheddar.

  6. Bake until bubbling with lightly browned edges, 10–12 minutes. Rest for 5 minutes before serving.
